Spinach and Potato Crush
Created this concoction this evening. First we boiled new potatoes in their skins with a stock cube, drained then added fresh lemon juice, garlic, cracked black pepper, spinach, and little low fat cheddar. Then mixed it all up in the saucepan, squishing the potatoes up and letting the spinach wilt, transferred it into an ovenproof dish, sprinkled on some parmesan and baked for a few minutes to crisp the top layer. Voila!
