Broccoli and Stilton Soup
As usual it’s utterly miserable outside. It hasn’t stopped raining for days on end so what else can a girl do but stay in and make soup.
Dice up an onion and two garlic cloves and soften in a drop of oil or butter over a low heat. Make up some vegetable stock. Chop up the heads of two small broccoli. When the onions are softened, add the broccoli, cover in stock and bring to a simmer. When the broccoli is soft, take off the heat and blend with a stick blender, crumble in the stilton and give it another little blend.
