Salami and Sweet Red Pepper Lasagne
Not your typical lasagne but we had odds and ends that needing using up in the fridge!
Preheat fan oven to 180degrees c.
In a pan, soften an onion, then add sliced sweet pointed pepper, some grated garlic and grated carrot. Cook for a few minutes Add some sliced up salami and cook for a further five minutes. Add some S+P, basil and a sprinkle of sugar. Add a can of chopped tomatoes and a drop of stock. Cook until rich and reduced.
Layer up sauce and dried lasagne sheets then top with a basic cheese sauce (flour, milk, cheese and nutmeg). Cover with foil and cook for 30 minutes, then sprinkle with extra cheese and pop back in the oven for another 10 minutes.
