Ten Minutes in Thailand.
Tonight we made Thai Red Curry for dinner, ten minutes transported back to Ao Nang Cliff Resort in Thailand. Granted there were no monkeys and it is around 25 degrees Celsius cooler here in soggy Wales.
In a pan heat up a generous spoon of Thai Red Paste, add 400ml of light coconut milk. Heat through then add finely sliced chicken breast, ribbons of carrot and courgette, pak choi, fresh chilli, sliced red onion, green beans, sliced red pepper, and slowly cook through. We added cooked rice noodles to ours, or you can serve with steamed rice as a side.
