Cheese and Potato Pie

Tonight we made a cheese and potato pie. I haven’t had a home made one since time began, probably about ten years!

Firstly, boil some peeled potatoes until ready to mash. Add some milk, S+P and grated cheddar and mash well. Grab an ovenproof dish and layer up mash followed by grated cheddar follwed by mash. The top layer needs to be the cheesiest. Then pop it in the oven at 180 degrees Celsius for 20 minutes until the cheese has melted and is starting to crisp.

You can experiment with different cheeses too. St.Paulin works well as does red Leicester. Or use a few different types in one pie. This one served four and used 70 pence worth of potatoes and 50 pence worth of cheddar. Cheap and cheerful.
